Vegan Fruit Loaf with YOGI TEA® Immune Support

 

An easy everyday fruit cake full of flavour and ready in minutes. We're using YOGI TEA® Immune Support to enhance the fruity bits of the bread by the taste of acerola cherry, echinacea and elderberry (which also contribute to a healthy lifestyle).

A fruity tea with natural vitamin C to help support your immune system. Key ingredients: acerola, echinacea and elderberry. Pour 200 ml of freshly boiled water over the teabag and allow to infuse for 5 minutes.

What you need:

350ml apple juice
3 YOGI TEA® Immune Support teabags
125g dried figs
125g sultanas 
150g dried cranberries
50g hazelnuts
50g walnuts
1 organic orange
100g ground almonds
250g spelt flour type 630
2 tbsp baking powder
3 tbsp maple syrup

Directions

Preheat the oven to 200 °C.

  • Bring the apple juice to the boil and steep tea for 5 mins.
  • Chop the figs, sultanas and cranberries.
  • Toast the nuts in a hot pan (no oil) for 3 mins. Make sure they don’t burn! Then chop coarsely.
  • Grate 2 tbsp orange zest, squeeze out the orange juice. Mix the orange juice, zest and dried fruit with the flavoured apple juice and leave to soak for 20 mins.
  • Mix the ground almonds, spelt flour and baking powder. Add the fruit mix and 2 tbsp maple syrup and mix well.
  • Transfer to a 25 cm loaf tin lined with baking paper and bake for around 50 mins. Brush with the remaining maple syrup and leave to cool completely.
